Chicken Shawarma

Why not try making chicken shawarma for you and your family. It tastes amazing, but you will need some patience. It's an authentic recipe, I hope you enjoy it as much as we do.

Ingredients

CHICKEN SHAWARMA STACK

  • 1kg Chicken Breast
  • 500g Chicken Thigh
  • 16 Tbsp Olive Oil
  • 1 Lemon (Juiced)
  • 2 Tsp Salt
  • 4 Tsp Ground Cumin
  • 4 Tsp Black Pepper
  • 4 Tsp Paprika
  • 1 Tsp Turmeric
  • 2 Tsp Chilli Flakes
  • 1 Tsp Cinnamon 
  • 8 Garlic Cloves (Minced)
  • 1/2 Lemon 
  • Onions & Peppers
  • 3 Skewers

GARLIC SAUCE

  • 16 Tbsp Sunflower Oil
  • 1 Egg White
  • 5 Tbsp Lemon (Juiced)
  • 1 Tsp Salt
  • 6 Garlic Cloves

SALAD

  • 1 Cucumber
  • 6 Tomatoes
  • 10 Radishes
  • Handful of Mint
  • Handful of Parsley
  • 6 Spring Onions
  • 1 Lemon 
  • 4 Tbsp Olive Oil
  • Sprinkle of Salt
  • Sprinkle of Pepper

Directions

  1. Slice chicken breast and thighs in half.
  2. In a large bowl, add olive oil, lemon, salt, ground cumin, black pepper, paprika, turmeric, chilli flakes, cinnamon and minced garlic.
  3. Mix together and marinate chicken with this mixture.
  4. Place in fridge (overnight).
  5. When ready to cook pre-heat oven to gas mark 9. 
  6. Cover large oven tray with foil and place 3 halved red onions on tray.
  7. Stick a skewer (make sure they are smaller than oven height) into each onion. 
  8. Then place marinated chicken through the skewers and stack till high.
  9. Next, add a half lemon on top of the skewers to hold stack in place.
  10. Then, scatter onions and peppers around the base of the shawarma stack.
  11. Cover with foil and place into oven.
  12. After 30 mins reduce heat to gas mark 7 and let it cook for 1hr 30 mins.
  13. Once cooked remove foil and let it cook for further 15 mins.
  14. Remove stack from the oven and carve chicken shawarma.

GARLIC SAUCE

  1. Blend oil, egg white, lemon, salt and garlic cloves together until it reaches a thick creamy consistency.

SALAD

  1. Dice cucumber, tomatoes, radishes, spring onions, mint and parsley.
  2. Place diced salad into bowl and add the juice of 1 lemon, olive oil, salt and pepper.
  3. Mix until combined.

SHAWARMA ASSEMBLY

  1. Spread garlic sauce on heated flat bread.
  2. Top with salad and place carved chicken on top.
  3. Roll up and enjoy!!!
