Indian Egg Roll

Ingredients

Indian Egg Roll

  • 1 Egg
  • 1 Original paratha
  • Half a small onion
  • Half a tomato
  • 2 Tbsp olive oil
  • 1/4 Tsp salt
  • Pinch of turmeric
  • Pinch of chilli powder
  • 1/4 Tsp coriander/cumin Powder
  • Splash of milk
  • A small handful of fresh coriander
  • A small handful of grated mozzarella
  • Bombay green chutney for serving (optional)

Directions

  1. Cook one side of a paratha in a pan and set aside once cooked.
  2. Dice the onion and tomato and add into a pan.
  3. Add in 1 Tbsp of olive oil to this mixture and stir.
  4. Meanwhile, whisk 1 egg with a splash of milk.
  5. Once the onions and tomatoes have softened add in 1 tbsp of olive oil.
  6. Add in the whisked egg and spread evenly across the pan.
  7. Add the paratha on this mixture, making sure the cooked side is face down.
  8. Let the egg cook.
  9. Once cooked flip over and cook till the paratha is crispy.
  10. Sprinkle on the coriander and cheese.
  11. Remove from the pan, roll up and enjoy!
