It's deliciously nutty and chocolatey, stuffed with a dollop of hazelnut spread. If you're looking to satisfy a sweet craving or even just want to stock up, then try this out.
Ingredients
COOKIES
- 15 Tsp Hazelnut Spread
- 190g Butter (Cold)
- 135g Caster Sugar
- 135g Light Brown Sugar
- 80g White Chocolate Chips
- 80g Milk Chocolate Chips
- 100g Hazelnuts (Chopped)
- 420g Plain Flour
- 2 Tsp Baking Powder
- 1 Tsp Salt
- 2 Eggs
Directions
- Cut the butter into cubes and place in the fridge.
- Next, cover a baking tray with greaseproof paper and place 1 spoonful of hazelnut spread per cookie.
- Place the baking tray in the freezer.
- Then, remove the butter from fridge and add into a mixing bowl.
- Add in brown sugar and caster sugar and mix together with a whisk until just combined (see video below).
- Add in white and milk chocolate chips and mix again until just combined.
- Next, add in plain flour, baking powder, salt, hazelnuts and milk and mix until mixture has a sandy texture.
- Add in whisked eggs and give one final mix (do not over mix).
- Once the dough is formed, weigh out into 80g dough balls.
- Create a well in the center and place frozen hazelnut filling inside and wrap the dough around.
- Then place the cookie dough balls into the freezer for 1 hour.
- Next, pre-heat the oven with a baking tray inside on gas mark 4.
- Once the tray is hot, place frozen cookie dough balls onto the tray and place in oven for 15 mins or until golden.
- Once cooked remove from the oven and let the cookies cool for 5 mins.
