Ingredients
Indian Egg Roll
- 1 Egg
- 1 Original paratha
- Half a small onion
- Half a tomato
- 2 Tbsp olive oil
- 1/4 Tsp salt
- Pinch of turmeric
- Pinch of chilli powder
- 1/4 Tsp coriander/cumin Powder
- Splash of milk
- A small handful of fresh coriander
- A small handful of grated mozzarella
- Bombay green chutney for serving (optional)
Directions
- Cook one side of a paratha in a pan and set aside once cooked.
- Dice the onion and tomato and add into a pan.
- Add in 1 Tbsp of olive oil to this mixture and stir.
- Meanwhile, whisk 1 egg with a splash of milk.
- Once the onions and tomatoes have softened add in 1 tbsp of olive oil.
- Add in the whisked egg and spread evenly across the pan.
- Add the paratha on this mixture, making sure the cooked side is face down.
- Let the egg cook.
- Once cooked flip over and cook till the paratha is crispy.
- Sprinkle on the coriander and cheese.
- Remove from the pan, roll up and enjoy!
